Carrot Cake Cupcakes š„š§

I have a line up of cute Easter treats for you guys, starting with these adorable mini carrot cakes!
Not only were these cupcakes super moist but they were topped with a gorgeous cream cheese frosting, chopped walnuts, mini bunnies and their carrots š
If you fancy making these beautiful cupcakes I have attached an amazing Carrot Cake recipe I adapted from @inspiredtaste

ā¢250g Plain Flour
ā¢2 tsp Baking Soda
ā¢1/2 tsp Salt
ā¢2 tbsp Ground Cinnamon (add more for a darker cake and more intense flavour)
ā¢295ml Vegetable Oil
ā¢200g Granulated Sugar
ā¢200g Brown Sugar
ā¢1 tbsp Vanilla Bean Paste
ā¢4 Eggs
ā¢4 Grated Medium Carrots
ā¢75g Chopped Walnuts or Pecans (I Use half of each)
ā¢Cream Cheese Frosting
ā¢Kitkat Bunnies
ā¢Icing Carrots

1. Preheat the oven to gas mark 4-5.
2. In a medium bowl, whisk flour, baking soda, salt, and the cinnamon until well blended.
3. In a separate bowl, whisk the oil, sugars, and vanilla.
4. Whisk in eggs, one at a time, until combined.
5. Add the dry ingredients in 3 parts, gently stirring until they disappear and the batter is smooth.
6. Stir in the grated carrot and chopped walnuts and mix until combined.
7. Divide the batter into cupcake cases and bake for 30-35mins (check with a skewer to ensure itās cooked)
8. Once cooled top with some cream cheese frosting, chopped walnuts/pecans, little bunnies and the mini carrots !
