Strawberries and Cream are the perfect British summer dessert and the added balsamic vinegar releases the most gorgeous strawberry juice that makes the perfect sauce to top your cream!

  1. Wash your strawberries and cut off the stalks.

  2. Quarter the strawberries and place them in a large dish.

  3. Measure 4 tbsp of balsamic vinegar and drizzle over the strawberries.

  4. Measure 3 tbsp of powdered sugar and add to the strawberries.

  5. Mix the strawberries so the sugar is dissolved and they have all been coated.

  6. Optionally you can add a squeeze of vanilla to infuse the strawberries with a sweeter taste!

  7. Place in the fridge for 3hrs to allow the strawberries to macerate. (I keep mine in for as long as possible as I love them softer)

  8. Pour your double cream into a mixing bowl and add your vanilla bean paste and powdered sugar.

  9. Whip until thickened but do not over whisk as you will end up with stiff cream!

  10. Place in the fridge to serve.

  11. When your strawberries are ready, pour a few tablespoons of the cream into a serving bowl and layer on a large helping of your strawberries and balsamic sauce.

  12. Top with mint or basil and serve!
