Mini Bruschetta BitesšŸ…ā™„ļø

These mini bruschetta bites make the perfect starter or light lunch! The marinaded tomatoes over the toasted baguette are a delightful combination.

•1 Rustic Baguette/Ciabatta

•300g Plum Tomatoes

•Extra-Virgin Olive Oil

•Balsamic Vinegar Glaze

•1 Clove of Garlic (optional)

•Fresh Basil

•Salt & Pepper

•Roasted Garlic Salt

•2 balls of Mozarella


⁣⁣ š•„š•–š•„š•™š• š••

  1. Quarter your plum tomatoes and marinate them in olive oil, balsamic vinegar and a generous amount of garlic salt.

  2. Next slice your baguette into 1 inch thick slices.

  3. Brush over olive oil on both sides of the slices.

  4. Heat a griddled pan and warm up your baguette slices until golden. You can use an air fryer if you have one but only warm them up for a few minutes as you don’t want them too crispy!

  5. Rub your garlic clove on one side of the baguette.

  6. Next spoon some of your tomato mixture, a drizzle of olive oil and top with some mozzarella and basil!

  7. If you fancy making it even cuter you can cut little shapes into the mozzarella (I did hearts ā™„ļø)

  8. Repeat the process for all slices and enjoy!
