Mini Bruschetta Bitesš ā„ļø

These mini bruschetta bites make the perfect starter or light lunch! The marinaded tomatoes over the toasted baguette are a delightful combination.

ā¢1 Rustic Baguette/Ciabatta
ā¢300g Plum Tomatoes
ā¢Extra-Virgin Olive Oil
ā¢Balsamic Vinegar Glaze
ā¢1 Clove of Garlic (optional)
ā¢Fresh Basil
ā¢Salt & Pepper
ā¢Roasted Garlic Salt
ā¢2 balls of Mozarella
ā£ā£ ššš„šš š
Quarter your plum tomatoes and marinate them in olive oil, balsamic vinegar and a generous amount of garlic salt.
Next slice your baguette into 1 inch thick slices.
Brush over olive oil on both sides of the slices.
Heat a griddled pan and warm up your baguette slices until golden. You can use an air fryer if you have one but only warm them up for a few minutes as you donāt want them too crispy!
Rub your garlic clove on one side of the baguette.
Next spoon some of your tomato mixture, a drizzle of olive oil and top with some mozzarella and basil!
If you fancy making it even cuter you can cut little shapes into the mozzarella (I did hearts ā„ļø)
Repeat the process for all slices and enjoy!
