PART 5- WFH LUNCH SERIES 🫶🏽Summer Salad 🥗

Pictured is a gorgeous Summer salad perfect for something light in the heat. You can supplement the smoked salmon for cooked salmon or any protein of your choice!



𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤

•Smoked Salmon

•2 Boiled Eggs

•1 Pack of Asparagus

• 1 tsp of garlic paste

•5 New Baby Potatoes

•1/2 Avocado

•1 Pomegranate

•Mixed Salad (I use rocket & water crest)

•Optional- (Pulses of your choice)


𝕄𝕖𝕥𝕙𝕠𝕕

  1. Boil your potatoes in salted water. When they are cooked, add in your eggs and use the water to boil them until jammy.

  2. Add butter and garlic to a pan and fry your asparagus until slightly charred.

  3. In a bowl add your salad mix and your pulses.

  4. Cut your baby potatoes and asparagus in half and add them to the bowl.

  5. Cut your salmon into ribbons and place in the bowl.

  6. Peel your eggs and quarter them and add them on top.

  7. Lastly sprinkle your pomegranate and add your favourite dressing and enjoy!  (I like honey mustard vinaigrette)
