PART 3- WFH LUNCH SERIES 🫶🏽 Burrata, Proscuitto & Nectarine Salad 🥗

May slightly be obsessed with burrata! I recently tried nectarines with prosciutto & burrata and thought I would do my own version as a light work from home lunch! This dish was super easy to whip up and looks restaurant quality for a fraction of the price!



𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤

•1 Pack of Nectarines

•1 Pack of Proscuitto

•1 Burrata

•1 Pomegranate

• Golden Syrup

•Rocket

•Sourdough Sliced Bread


Additional- Fresh mint & pomegranate molasses


⁣ 𝕄𝕖𝕥𝕙𝕠𝕕

  1. Preheat your oven to 180 degrees and fill a large baking dish with parchment paper.

  2. Slice your nectarines into wedges and place them into the baking dish.

  3. Drizzle your syrup over the nectarines and bake for 15 minutes until slightly dark in colour.

  4. Whilst the nectarines are baking, take a slice of prosciutto and role it into a rose. Repeat for all 12 slices.

  5. Take the nectarine out the oven and set aside to cool.

  6. Take your sourdough slices and drizzle with olive oil and bake in the oven for 5 minutes until crispy and then set aside.

  7. Once your nectarines are warm, add your rocket into a serving bowl, place the nectarines on top and add in your little roses.

  8. Sprinkle your pomegranate and then take your ball of burrata and break it apart with your hands, evenly placing it between your nectarines and prosciutto.

  9. Drizzle your dish with salt, pepper, olive oil and the fresh mint

  10. Take out your sourdough slices and serve with your dish!
